Hand-rolled naturally leavened bagels made in Asheville

Nosh is a micro bakery in Asheville, NC offering small-batch bagels, bialys, and more, all made using locally milled organic flours. Our bagels are long-fermented for loads of flavor, boiled in barley malt syrup, and baked to a perfect balance of outer crust and chewy interior.

First Saturday pick-ups

We’re thrilled to offer First Saturday pick-ups, hosted by our dear friends at New Stock Pantry.

Pre-order your bagels and bialys on New Stock’s website (along with their homemade schmears and house-cured fish, of course!), then pick up your order between 10am–1pm on the first Saturday of each month at their production kitchen at 148 Weaverville Road in Woodfin.

Baking classes

If you’ve ever been curious to try making some of our goods at home, you can join one of Emily’s classes at The Asheville Kitchen. We have dates on the calendar throughout April, May, and June where you can learn our methods for making bagels, bialys, challah, babka, and even a good ol’ sourdough loaf!
